Rainbow salad with confit duck shavings
- Ingredients
- Mixed salad leaves
- Conift duck shavings
- Modena balsamic cream
- Roasted sesame seeds
- Pansy petals
- Raspberries
- Strawberries
- Blueberries
- Virgin olive oil
- A few drops of squeezed lemon
- Salt
- Preparation
- Make some circles around the plate with the Modena balsamic cream, using a spoon or a bottle. Impregnate the cream with sesame seeds.
- Form a mound in the middle of the plate with the mixed salad leaves. Then add in the confit duck shavings and the pansy petals on top of the salad leaves.
- Finish and Presentation
Decorate the salad with raspberries, strawberries and blueberries and salt and dress with virgin olive oil and lemon drops.
